We will be butchering one of our pasture raised hogs for whole-hog sausage. This means that all of the main cuts–ham, loin, etc.–will be added in, not just the trimmings. Whole-hog sausage is a premium product due to this. We will be reserving the bacon, meaning that the breakfast share will be bacon and sausage. While we cannot be certain before the pig is harvested, we are expecting each share to have a final, in-your-freezer weight of about 30 lbs., with approximately 4 lbs. of this being bacon. You can select two choices from four styles of sausage: ground sausage, sausage patties, sweet Italian rope sausage, and smoked rope sausage. The meat will be vacuum packed and frozen for pick-up.
Additionally, you will receive approximately 5 lbs. of scrapple plus a container of lard.
All costs are included in the purchase price. There will be no additional processing, packaging, or other fees.
